High Fibre Chicken Avocado Wrap

This is my kind of lunch , quick, filling, and made with simple ingredients you probably already have in the fridge.

With chicken for protein, avocado and hummus for healthy fats, and plenty of fresh veggies and fibre, it’s an easy way to build a satisfying lunch without making things complicated.

And if you have leftover chicken already cooked? Even better.

Lunch is basically done. 😂

Serves 1

Ingredients

  • 1 high-fibre whole grain wrap

  • 3–4 oz cooked chicken breast, sliced or chopped

  • ¼ avocado, sliced or mashed

  • 2 tbsp hummus

  • ½ cup mixed greens or spinach

  • ¼ cup chopped cucumber

  • ¼ cup chopped tomato

  • 2 tbsp thinly sliced red onion

  • Squeeze of fresh lemon juice

  • Salt and black pepper, to taste

Optional Add-Ins

  • Crumbled feta or goat cheese

  • Fresh herbs such as parsley or cilantro

  • Sliced bell peppers

  • Shredded carrots

  • A sprinkle of pumpkin or sunflower seeds

  • Hot sauce or chili flakes if you like a little heat

Directions

  1. Lay your wrap flat and spread the hummus over the centre.

  2. Add the chicken, avocado, greens, cucumber, tomato and red onion.

  3. Squeeze a little fresh lemon juice over everything and season with salt and pepper.

  4. Fold in the sides, roll it up tightly and slice in half.

  5. That’s it — lunch is ready!

Jodie’s Tip

This is a great one for using up leftover chicken from dinner. Cook a little extra chicken when you’re making dinner, and you’ve already done most of the work for tomorrow’s lunch.

Or make it even easier and grab a rotisserie chicken from the grocery store. Pull off what you need for your wrap and save the rest for salads, bowls or another quick meal during the week. Healthy eating doesn’t always mean cooking everything from scratch. Sometimes the rotisserie chicken is the plan.
